Slimming World Mushy Pea Curry

First things first. No, you don’t taste the mushy peas and yes, definitely keep the contents of this dish from anyone you are serving it to. Better the devil you know and all that. My husband regularly eats this with no idea what’s in it… until now. Sorry!

This takes 20 mins to make, freezes well and will stretch to eight or nine portions.

Gather your ingredients which will be mostly tin based!

  • 1 tin of mushy peas
  • 1 tin of chopped tomatoes
  • 1 tin of baked beans
  • Curry powder – three tablespoons
  • 1 clove of garlic – sliced
  • Handful of mushrooms – sliced
  • 1 onion – chopped
  • Glug of Balsamic Vinegar (not essential)
  • Your protein/veg of choice – Chicken, prawns, beef or some chunky veg

Kitchen stuff you will need:

  • Tin opener
  • Saucepan
  • Frying pan
  • Hand held food mixer

Here comes the easy peasy part.

  • Throw the whole lot, minus the protein or chunky veg into a saucepan.
  • I fried my onions, mushrooms and garlic separately and added when cooked.
  • Heat it up till its bubbling – it looks completely gross but stick with me. Hope I haven’t lost you yet!

  • Get your hand held blender,
  • Whizz it up till it resembles a chip shop curry sauce. It should be completely smooth.

  • Fry up your chicken, fish, veg or all of the above.
  • Pour over sauce. Heat.

AND THAT’S IT!!!!! Serve with rice or Slimming World Chips!

And there you have a Speed dinner with no syns and it’s super yummy. It freezes really well and the above quantities will make enough sauce for at least eight servings.

It might take you a few goes to get the right heat in terms of the curry. Use a curry powders you like. You can add chili powder too but I don’t.
